The Clams are exclusively harvested from October to February, when they reach the ideal size and texture for consumption. Like cockles, clams are soaked in seawater upon arrival at the factory to remove sand. They are then cooked and washed in warm brine to eliminate impurities. These clams, known as carpet shells, are sourced from the Ría de Arousa and the Ría de Muros.
The Clams from Los Peperetes are certified by the “Pesca de Rías, de onde se non?” stamp, ensuring its origin, quality, freshness, and sustainable capture in Galicia.
