The sea urchins are purchased in Fisterra, O Grove and Aguiño fish markets. They are taken from the sea by divers during the months of January, March and April. In order to process them, they are cut open and the gonads (roe) are extracted with small spoon. These are then washed and selected. The demand for this product has boomed and it is increasingly used in novelle cuisine.
