This cephalopod, like octopus, requires a very delicate production process. In addition to a thorough cleaning, it needs to be cooked in very salty water to achieve the desired flavour. Once it has been turned inside out to complete the cleaning process, it is stuffed by hand. The sauce is then prepared using olive oil, onion, tomato and fine wines, adquiring dark colour due to the ink.
