The Clams are exclusively harvested from October to February, when they reach the ideal size and texture for consumption. Like cockles, clams are soaked in seawater upon arrival at the factory to remove sand. They are then cooked and washed in warm brine to eliminate impurities.
It is recommended to eat it directly from the can. They can be used as a pairing for a piece of bread and a good wine.
